In the USA, things labeled “Rocky Road” are usually full of chocolate, marshmallows and nuts. Sure many associate rocky road with ice cream but you can make other desserts from this delicious combination! With marshmallows being a big trend for summer treats, consider a similar flavor and try these rocky road marshmallow pops at the next campout or barbecue!

First gather your ingredients!
- Large campfire marshmallows
- Paper straws
- Semi sweet chocolate
- Vegetable oil
- Nuts
- Optional: butterscotch or caramel
Next, prepare your ingredients for assembly. Chop up your nuts up. I used peanuts as that’s what I had on hand but almonds or walnuts would taste just as great in this rocky road dessert! I just threw them in a plastic bag and went to town with a meat mallet.
Insert paper straws into your marshmallows. I cut my straws down a bit as they seemed a bit too long.
Melt your chocolate. My favorite way is in the microwave with a little vegetable oil on the defrost mode. Mix every 30 seconds until full melted.
Spin the marshmallow in the chocolate to cover the sides. I used a large spoon for this rolling technique. (and an extra pair of tiny hands in order to take this shot! haha)
Next roll one portion of your marshmallow in the nuts. Sit on a drying rack.
Melt your butterscotch or caramel chips slightly and drizzle on the top of the pops. Throw in the fridge until ready to serve.
Bring out these rocky road marshmallow pops to enjoy day or night!
Though it would no longer be “Rocky road” in nature but instead put in the s’mores category, you could easily swap out the peanuts for graham crackers for anyone with peanut allergies!
