Last April, I shared a post with a list of recipes I had pinned and tried. They ranged from dinner to brunch to dessert. Fast forward a year and my sister-in-law Lauren and I have two picky toddlers on our hands! We turned to Pinterest and started trying out some Toddler specific recipes or food techniques and here's what we discovered: The Best Toddler Muffins: RECOMMENDED! This title was of course enticing! The list of ingredients included veggie hiding options - like pumpkin and carrots, great alternatives to oil - like applesauce and yogurt, and our favorite muffin staples - like cinnamon and brown sugar. I used Greek yogurt for the yogurt option and spent some time shredding baby carrots since I was more likely to eat the remaining supply than a large whole carrot. Verdict: We all loved them! They are not limited to toddlers alone! Derek and I both enjoy these muffins when they are fresh and I freeze a few packs of them for Brielle's consumption later. Monkey Bread
This recipe was given to me by my friend Aimee's mom. She used to make it for us in the morning after Aimee had sleepovers and it was something I always associated with their house. It's something that can be made ahead of time and heated up to eat, or made fresh that morning. I made it this year for Christmas morning breakfast at D's sister's house. Ingredients: 3/4 stick of butter 1/2 cup white sugar 2 tsp cinnamon 2 containers of Grands Biscuits Bundt Pan Mix the sugar and cinnamon in a bowl. Cut the biscuits into quarters and roll in the cinnamon sugar mix to cover. Put into the greased bundt pan. Tip: usually I put the cinnamon sugar in a large ziploc and shake to cover, but we were all out and I had to use a bowl. The bag makes for cleaner hands! Pour the melted butter on top of the biscuits and put in an oven already preheated to 350 degrees, for 40 minutes. Know that the biscuits will expand when baking so don't worry if it doesn't fill the pan. When it comes out the oven it looks like this: Allow to cool a bit and flip over for serving. Banana Muffins
If you didn't already know, but might've already guessed, I'm not a chef! I don't really know how to cook (maybe since both D and I don't really like a lot of stuff) but I do enjoy baking! Made these bad boys the other day: I'm a fan of the "recipe box" feature on AllRecipes.com which stores my favorites like as a virtual recipe box. Like any google search, I also sift through the first page of reviews before making a recipe to see what alternative things groups of people were finding to make the recipe better. I did the "swap 1/3 cup oil instead of butter" thing since I was low on butter (PS why is butter never on sale these days?!) and they made 12 decent sized muffins.
